Orange Juice Concentrate Production Process
Practical guidance for commercial fruit ingredient sourcing, formulation and procurement teams.
Orange juice concentrate is typically produced by preparing and extracting juice from sound fruit, clarifying or finishing the juice as required, and removing a controlled portion of water under processing conditions designed for the target product.
Why concentration changes the supply format
Reducing water increases soluble solids and can improve shipping efficiency, but the finished concentrate still needs a defined specification for Brix, acidity, color, flavor, microbiological limits and storage.
From concentrate back to beverage
In formulation, concentrate is diluted according to the actual product specification and finished beverage target. Product developers should calculate solids and acid contribution rather than rely on a universal dilution ratio.
Commercial approval
Process descriptions are educational. The current supplier specification, certificate of analysis and handling instructions should control purchasing and production decisions.
